Tomato Soup Ingredients

  • 1 tablespoon butter
  • 1 medium size onion finely chopped
  • 3 cloves garlic
  • 2 cups chicken broth
  • 750g fresh tomatoes
  • ½ teaspoon dried basil
  • Boiling water
  • Salt and pepper to taste
  • ½ cup fresh cream (optional)

Preparation Method

  1. Make small incisions in the skin of the tomatoes, then soak in boiling water for 5 or 6 minutes
  2. Peel the tomatoes, and dice them finely
  3. Melt the butter in a saucepan and sauté the onion and the garlic until translucent
  4. Add the chopped tomatoes with the salt, pepper and dried basil. Allow to boil for 5 minutes
  5. Puree the ingredients until smooth using a blender
  6. Transfer puree back to the saucepan, add chicken broth, and allow to boil for a few minutes
  7. Whisk in the fresh cream if desired
