Tomato soup is prepared using tomatoes as a primary ingredient with other key ingredients to give it its unique flavour. We hope you enjoy this recipe as much as we do:
Tomato Soup Ingredients
- 1 tablespoon butter
- 1 medium size onion finely chopped
- 3 cloves garlic
- 2 cups chicken broth
- 750g fresh tomatoes
- ½ teaspoon dried basil
- Boiling water
- Salt and pepper to taste
- ½ cup fresh cream (optional)
Preparation Method
- Make small incisions in the skin of the tomatoes, then soak in boiling water for 5 or 6 minutes
- Peel the tomatoes, and dice them finely
- Melt the butter in a saucepan and sauté the onion and the garlic until translucent
- Add the chopped tomatoes with the salt, pepper and dried basil. Allow to boil for 5 minutes
- Puree the ingredients until smooth using a blender
- Transfer puree back to the saucepan, add chicken broth, and allow to boil for a few minutes
- Whisk in the fresh cream if desired
