Cheesy Broccoli and Chicken Pasta Recipe

Cheesy Broccoli and Chicken Pasta Recipe Ingredients

  • 4 cups milk
  • 3 bay leaves
  • 2 garlic cloves
  • 2 sticks cinnamon
  • 500g dried penne pasta
  • 350g broccoli, small florets
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons flour
  • ½ teaspoon freshly grated nutmeg
  • 200g cheddar cheese
  • 4 boneless chicken breasts
  • Salt and pepper to taste

 

Preparation Method

  1. Heat olive oil in a pan, and cook chicken breasts with bay leaves, cinnamon sticks, salt and pepper and then cut into cubes
  2. Boil pasta as per package instructions
  3. In a saucepan, boil milk with garlic. Remove garlic and allow milk to cool
  4. Melt the butter in the saucepan, and then add the flour stirring to make a paste. Add the milk gradually whisking constantly to avoid lumps. Bring to boil, while continuously stirring until sauce is thick and lump free
  5. Remove from heat, stir in the nutmeg and 2 tablespoons cheese, and combine with pasta, broccoli and chicken
  6. Transfer to an oven dish. Sprinkle with remaining cheese on top. Bake at 200C for 30 to 40 minutes until cheese is golden brown
