Leg of Lamb with Mint Recipe Ingredients
- 1kg leg of lamb
- 1 cup olive oil
- 2 cups mint, coarsely chopped
- 15 cloves garlic, crushed
- Zest of 2 lemons
- Salt and pepper to taste
Mint Pesto (optional)
- 2 cups mint
- ½ cup olive oil
- 2 cloves garlic
- ¼ cup pine nuts
- 1 tablespoon grated parmesan cheese
Preparation Method
- Combine ¾ cup olive oil with mint, garlic, lemon zest, salt and pepper
- Coat the lamb leg with the mixture, making incisions at various locations and inserting some of the mixture in these incisions
- Transfer the meat to a greased pan with ¼ cup olive oil, and let it rest for 1 hour. Cover with aluminum foil
- Bake at 200C, for about 1 hour or until meat is easily penetrated with a fork
- Meanwhile prepare the pesto by putting all ingredients in a blender and mixing until smooth
- Serve with pesto and a side of grilled vegetables
