Leg of Lamb with Mint Recipe Ingredients

  • 1kg leg of lamb
  • 1 cup olive oil
  • 2 cups mint, coarsely chopped
  • 15 cloves garlic, crushed
  • Zest of 2 lemons
  • Salt and pepper to taste

 

Mint Pesto (optional)

  • 2 cups mint
  • ½ cup olive oil
  • 2 cloves garlic
  • ¼ cup pine nuts
  • 1 tablespoon grated parmesan cheese

 

Preparation Method

  1. Combine ¾ cup olive oil with mint, garlic, lemon zest, salt and pepper
  2. Coat the lamb leg with the mixture, making incisions at various locations and inserting some of the mixture in these incisions
  3. Transfer the meat to a greased pan with ¼ cup olive oil, and let it rest for 1 hour. Cover with aluminum foil
  4. Bake at 200C, for about 1 hour or until meat is easily penetrated with a fork
  5. Meanwhile prepare the pesto by putting all ingredients in a blender and mixing until smooth
  6. Serve with pesto and a side of grilled vegetables
